This easy beef salpicao recipe can help you put a yummy dish on the table during days when you do not have much time to cook in the kitchen.

If you are in for a busy day, then this is a dish that you can prepare without sweat! Easy beef salpicao is what it is, easy, quick cooking, but definitely not short of flavor and yum factor.
I typically cook this on days when I have an extremely long list of back to back chores (like when i have to review my eldest for an exam, i have to catch up.on my cloth diaper laundry, or I have writing backlogs). You see, it is easy to cook — no more than five minutes. Prep time is easier too and i discovered a way to further cut short that prep time.
When i buy beef in the grocery, and i intend to use it for salpicao, i choose my favorite cut and then ask the butcher to slice it further to me for salpicao. It is a free service after all, so might as well take advantage of it.
Now once we get home, i wash the beef and prep the marinade, and marinate the beef for twelve hours. Yes even if i do not intend to use it later or the next day. Why? Because I can freeze it and thaw it the day I would like to cook it. Almost zero prep time on D-day right?
So without further ado, here’s the recipe of —

Quick and easy beef salpicao

Ingredients:
1kg beef chopped into small cubes (i usually choose tenderloin)
6-7 pcs garlic minced
3-4 tbsp liquid seasoning
1 tbsp worcestershire sauce
1 tbsp oyster sauce
2 tbsp olive oil
1-2 tbsp butter
Pinch of paprika
Pinch of pepper
Optional ingredient: chili flakes

Procedure for the beef salpicao recipe

1. Mix all the ingredients except for the beef, oil, butter, and garlic to make the marinade.
2. Mix the marinade thoroughly and pour over the beef cubes. Marinate for at least 30 minutes.
3. Once ready to cook, heat oil and saute the garlic until golden brown. Remove the garlic and set aside.
4. Strain the beef cubes, and fry for two to three minutes searing all sides of the cubed meat.
5. Add some of the marinade mixture and cook for another 1 minute. Add the butter stir through the cubes and it is done!
6. Serve with the toasted garlic on top. Add chili flakes if you want it spicy. I usually use marble potatoes as a side to this dish because my eldest loves it!

As promised, I will be posting simple recipes meant to help newbie cooking mamas survive the daily cooking grind. Today’s blogpost is about how to cook crispy liempo. Yes, the classic and simple crispy fried liempo is not so healthy, but once in a while, maybe we can indulge ourselves.

I grew up eating the not-so-crispy fried liempo – the juicy type. However, now that I have my own family, I cook it the way they like it which is crispy! Yes I was once like most ladies who are scared of splattering oils, but then I have learned a technique from my good old aunt who taught me basically how to cook.

Anyway, the key here is to deep fry the liempo, and make sure that the oil is super hot prior to frying. Cover the pan while frying because cooking oil will be splattering everywhere once the pork hits the cooking oil!

Of course have paper towels handy so that you could get rid of the excess oils. PARDON ME though for using Manila Paper because we ran out of paper towels (hahaha). Before I forget, if you like it super crispy, choose thin country-style pork belly slices. If you want it crispy yet juicy, go for the medium thick liempo slices. Choose country style liempo or pork belly. Some families prefer thin slices while some like it thick. In our experience thick ones are juicier, while thinly sliced ones are crispier so take your pick.
Anyway, for newbie cooking mamas who may not be familiar as to how to cook crispy liempo, here’s a rough guide:

INGREDIENTS FOR CRISPY LIEMPO:

  • Pork Liempo
  • White Vinegar
  • Lots of Garlic, minced or chopped or dinikdik whatever you prefer  (6-7 cloves would be fine for one kilo of pork)
  • Cracked Pepper
  • Salt
Boil the liempo slices in vinegar and water, plus seasoning for about 20-30 minutes.

PROCEDURE IN COOKING CRISPY FRIED LIEMPO:

1. After washing the liempo lay them on the pan. Add in vinegar (3/4 cup will be fine for 500-750 grams of meat) chopped garlic (i used about four cloves), salt and pepper.

2. IF YOU PLAN TO SERVE SOME TO YOUR BABY AND TODDLER, JUST BOIL SEPARATELY, AN UNSALTED VERSION OF THE PORK BELLY.

3. After boiling/tenderizing the pork for 25-30 minutes, lay on paper towels and pat dry.

4. In a separate pan, heat 2-3 cups of cooking oil (we use either canola or coconut oil but any vegetable oil will do). Make sure it is super hot before deep frying the liempo slices. FRY THE UNSALTED BELLY SLICES FIRST SO YOU CAN SET THEM ASIDE / EASILY SEPARATE FROM THE SEASONED ONES.

5. Check the sides and edges of the liempo. If it is turning golden brown, that means you can already flip the liempo.

6. Once done, drain, and then lay on paper towels to get rid of excess oils.

7. Serve while hot preferably with atchara or ensaladang mangga!

Wondering how to cook tortang talong? It is so easy!

Been a long time since I last posted here in our little website, so please accept my apologies. This 2018 though, I promise to post more – including recipes like how to cook Tortang Ampalaya, which is not just under P100.00 to make, but is also so easy and simple, that even a newbie cooking mama can whip up easily.

I was thinking that back when I was a new ILAW NG TAHANAN, there were recipes that are so simple, but when it is your turn to cook it, you’ll suddenly find yourself asking someone how to cook it, or google your way to the answer.

So now from time to time, I will be posting random recipes that are either for NEWBIE COOKING MAMAs, or recipes that are under P100.00, or BOTH as the case of our article today which is how to cook Tortang Ampalaya, I would also endeavor to post quick cooking recipes and freezer meals for those times that we have not much time and energy to whip up complicated dishes.

Easiest way to cook Tortang Ampalaya

Ingredients:

  • One Large Ampalaya
  • Two Medium Sized Tomatoes Chopped
  • Two Cloves Garlic, Minced
  • One Medium Sized Onion, Chopped
  • 2-3 Pcs Eggs
  • Salt and Pepper to taste

Procedure:

  1. Just slice and wash the ampalaya (some households wash and soak their sliced ampalaya with salt to reduce bitterness, while some households don’t because they say this reduces as well the nutrients you get from the ampalaya, so I leave the ampalaya prepping up to you ladies).
  2. Saute the onion, garlic and tomatoes. Once the onions get somehow transparent add in the Ampalaya. Saute for 2-3 minutes.
  3. Beat the eggs (i used two for a big ampalaya, but if you love eggs you can use three!) in a separate bowl. Add into the pan and then mix as if you are scrambling all the ingredients.
  4. AT THIS POINT YOU MAY ALREADY SEPARATE A PORTION FOR YOUR BABY OR TODDLER so that their torta will be unseasoned.
  5. For adults, you may use salt and pepper to season your tortang ampalaya.

This is now ready in less than 10 minutes, and yes, this is another under P100 ulam idea!
