How to make choco chip cookie bars when you do not have the time and patience to make choco chip cookies 🙂

It has been a while since I last posted. The holiday season plus the ongoing pandemic continues to take a toll in our daily schedule. I feel more relaxed now, but I have been remiss in writing for this blog of ours. 

Will try my best to keep on posting recipes, revive my weekly meal plans, home making tips, stories of our parenting adventure, our homeschooling journey, and more. Thank you very much for dropping by from time to time. 

For now, I will be sharing one yummy, easy to do pastry recipe borne out of lack of time (and patience to wait) to do an actual choco chip cookie or butterscotch or revel bars hahahaha. These choco chip cookie bars though are a hit with my children, and really they are so easy to make. It is just like my making brownies! Anyway, here is the recipe:

Choco Chip Cookie Bar Recipe

This choco chip cookie bar recipe was adapted from thebakingchocolatess.com. I made a few tweaks on her recipe to suit my litte ones’ taste buds! so here you go, no special equipment needed, just a mixing bowl, a spatula (or fork), a pan, and your trusty oven. 

Ingredients for the Delicious Cookie Bar:

1.5 Cups of All Purpose Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1/2 Cup Softened butter
3/4 Cup Brown Sugar
1/2 Cup White Sugar
2 Tbsp Muscovado Sugar
1 Large Egg
1 tsp Vanilla Extract
1.5 Cups or more of high quality chocolate chips (use Hershey’s or Beryll’s at least)

Baking the choco chip cookie bar

1. Preheat the oven to 350F
2. Mix the butter and all the three types of sugar.
3. Add the beaten eggs
4. Add the vanilla
5. Add in the flour, salt and baking soda
6. Fold in the choco chips, leaving some to top the bars before baking. 
7. Pour the batter into a greased pan. Top with the rest of the choco chips, and bake for 20-23 minutes.

Since not all ovens are the same, check the bars on the 18th minute mark to see if it is well-baked already. Do the toothpick test. If it comes out clean then it is done. Let the cookies rest in the pan for 10 minutes before trying to cool them into your baking rack. Slice and enjoy! Till next post!
