When i have far too many chores and writing backlogs, i usually rely o the freezer meals that I have made ahead of time. One of which is baby back ribs, but since it calls for a side dish, i usually go for something baked roo so that i could throw it in the oven as well while the ribs are being baked too.

Sharing with you ladies this cheesy baked eggplant recipe which is a perfect side dish or simply a great meal for when you have had enough of the torta, adobong talong, grilled eggplant salad or whatever talong dish that you love.

For newbie cooking mamas who are interested to know how to cook baked cheesy eggplant here is a rough procedure:

1. Pre-heat oven to 300c.

2. Wash and slice eggplants and season with salt.

3. Dip in beaten eggs and roll in breadcrumbs. I only have japanese breadcrumbs today so I used that.

4. Line it in a baking dish and bake for 15-20 minutes or until the crumbs become toasty.

5. Flip the eggplants and bake again for 15 minutes.
.
6. Pour your homemade or ready to use chunky tomato sauce.

7. Layer grated cheese on top. Mozarella is best but if you do not have it quick melting cheese would do the job well too.

8. Bake for another five minutes or until the cheese goes gooey and bubbly

9. Serve hot!
