How to cook salt and pepper crunchy fried liempo
1. Tenderize the liempo by boiling and simmering in water with a tablespoon of salt and a pinch of pepper for about 30 minutes.
2. Pat dry, season with a bit of salt and pepper, and allow to rest. Meanwhile heat up cooking oil for deep frying.
3. Once the oil is hot enough, deep fry the liempo slices till desired crunchiness. Mine looks very crunchy because that is how my family likes it – extra crispy. So ny frying went on for like four to five minutes.
4. Drain excess oil in paper towels and serve hot with atchara or any veggie dish on the side.
