Ingredients:
1 small pack Vermicelli Noodles (sotanghon)
1 cup shredded pre-boiped chicken breast
1 cup sitsaro (snow peas)
1 medium carrot, sliced
3-4 cups chicken broth
Atsuete Powder
Salt and Pepper to taste
1-2 tbsps of cooking oil
2 cloves of garlic, minced
1 medium sized onion, chopped

Cooking Procedure for Chicken Sotanghon Soup:

This dish is uncomplicated, although it requires a some prep time.

1. Pre soak sotanghon in water for about 15 minutes. Set aside.
2. Heat atsuete seeds in cooking oil. When the color has been infused on the cooking oil, remove the seeds. If using atsuete powder, just add the powder into the oil.
3. Saute in the achuete oil chopped onion and garlic. Add in the shredded, pre-cooked chicken (or if you have left over rotisserie or fried chicken that would be fine too).
4. Add in the carrots and the snow peas. If you have celery and cabbage you can add some too.
5. Pour chicken stock 3-4 cups (boiled chicken bones with onion, garlic, and whatever veggies you have at home like sayote and cabbage — cooked for about 20 minutes then strained).
6. Bring to a boil and simmer for two minutes.
Add in the strained pre-soaked sotanghon.
7. Cook for about 3-4 minutes.
8. AT THIS POINT SEPARATE AN UNSEASONED PORTION OF SOUP AND NOODLES FOR YOUR TODDLER AND BABY.
Continue cooking and season for the adults — you may use patis or salt, and then finely ground pepper.
9. Stir and simmer for a minute, then serve.

You may top with crispy fried garlic and chopped onion leaks.
