Sharing to you ladies one of my specialties, the Super Spicy Adobo. This started out as an experiement of mine to replicate the spicy adobo dish that we order back when i was still working. Ive tried around three times before i finally got it right, haha pero all those three times I tried, P appreciated but I had a different goal.
I wanted it to taste exactly like the spicy adobo dish that I love. Now that I got it right it had been a regular dish in our rotation.
Spicy adobo recipe
I have shared the recipe here before, but for those who are havin a hard time back reading, here is a simplified rough procedure:
Spicy Pork Adobo
1. Cook adobo the way ou usually do – use whatever meat and meat cut you like, chicken breast or thigh, pork liempo, pork adobo cut or buto buto will be fine. We all have diff ways of cooking adobo, and some of us like it sweet, some more on the salty side, and some like it tangy. So just cook your normal adobo recipe then set it aside.
2. In a cookng pan heat oil and add some atsuete seeds. Squeeze the seeds to extract more color and once it is super orangey already like the chicken oil in bacolod inasal places, take out the seeds. If you are the type who likes to drizzle oil in your rice then it may be best to use olive oil pambawi ng konti sa putok batok na recipe na ito 😅
3. If you want it super spicy saute chopped labuyo. If you are fine with just normal spicy, just fry in the adobo pieces in the pan.
4. Add a drizzle of chili powder and chili flakes depending on the spiciness level that you can tolerate.
5. Stir through and make sure all meat pieces are coated with the oil and chili. Cover for about three minutes in medium heat.
6. Add in some of the sabaw of your adobo and let it reduce. Taste the dish and adjust seasoning accordlingly.
7. Serve with lotsa rice and your fave ice cold drink! Kain na po tayo 😊😊
