Palitaw will always be a yummy merienda for me, and this is why I also introduced this native merienda recipe to my kids. I figured though that they are more likely to enjoy it if i make colorful palitaw instead of the standard ones that are plain white sprinkled with coconut shavings. Not that there is something wrong with the original recipe but because you know kids, they like everything to be happy and colorful.

So i will be sharing with you today how to make colored palitaw so that you too can make it more enticing for your kids to eat. Also makes for a great baon.
If your kids are like mine, they too will enjoy making shapes out of the colorful dough.
So without further ado, here’s our–

Colorful palitaw recipe:

Ingredients:
1 cup of glutinous rice flour (split into two)
1/2 cup of water (split into two)
1/2 cup of grated coconut
1/4 cup of sesame seeds
2-3 tbsp white sugar
2 different food coloring depending on your choice (we used green and red – you can use more just double up the recipe as well)

Procedure in cooking colored palitaw:

1. Make two separate mixtures of the split portions of water and glutinous rice flour. Add food coloring ( i used about 3 drops each but you may want to make it lighter or darker so asjust accordingly). Remember though that the color of the dough will darken further when submerged in water.
2. Form balls and flatten it to make the standard palitaw shape or use cookie cutters to make some happy shapes out of your palitaw dough.
3. Bring a pot of water into a boil, and once boiling drop the palitaw carefully. Scoop out the dough once the colorful palitaw floats in the water. It means it is already cooked.
4. Set aside the cooked mixture till it cools a bit.
5. In a pan, toast the sesame seeds until it bevomes fragrant. Make sure that it doesnt get burned lest it will affect the taste of the whole dish.
6. Once the sesame seeds have been toasted transfer ito a container and add in the white sugar. Set aside.
7. Get the cooked palitaw and roll it in fresh grated coconut. Sprinkle the sugar-sesame seed mixture and serve.
So there you have it, i hope you could give this recipe a try. This was how I served it to my daughter as she brought it in her school as her baon. I purposely did not roll the palitaw in niyog because she wants to do it by herself. Same with the sugar-sesame mixture.
