If your children are like mine then chances are you have now in your refrigerator a lot of boiled eggs from yesterday’s egg hunting festivities. Over the years, I tried to be creative in terms of using the boiled eggs they got.
I usually tried to make egg salad sandwiches, which I tweak year after year. The last time I made one that tried to mimic those in Japanese convenience stores. But then, my children got tired of it.
So now, I tried something that has local flare, in bite sized portions. The bite-sized tukneneng, which is basically a copycat of the big chicken eggs that are coated and deep fried and peddled on the street.
Here goes my street-style deep fried egg bites:

I just made some batter with the following ingredients:
1 cup water
3 tbsp cornstarch
1 cup all-purpose flour
½ tsp baking powder
3/4 tsp salt
½ tsp ground pepper
Atsuete powder or drops of red + yellow food coloring
I then coated the eggs with the batter and deep fried them.
For the sauce I prepared was simply made of cane vinegar, diced onions, and some drops of liquid seasoning. It was all good and the kids enjoyed it!
If you are not inclined to feed your family some deep fried food, then maybe you can try these other suggested dishes that you can make out of the boiled eggs your children got from the Easter egg hunt:
Other dishes to try for boiled eggs:
- Adobo Eggs – If you are scheduled to cook some adobo, then why not add a bit more sauce and add the boiled eggs in them? You can also add boiled eggs in your humba. I have these recipes for both adobo and humba here in the website.
- Egg salad sandwich – If your family enjoys having sandwiches for lunch or merienda, or even breakfast then this is a great alternative. Here’s my special egg salad sandwich recipe that you can follow.
- Deviled Eggs – Easter eggs can be deviled eggs? Well, yes, just slice them in half, remove the yolk. Now to the yolk add some of your favorite mayonnaise, salt, pepper, cumin, and a bit of cayenne pepper and vinegar. Put the mixture onto a piping bag, and pipe back into the hollow of the egg whites. Garnish with chopped spring onions or cayenne pepper before serving.
