Easy baked tahong recipe from the Happypinaymommy Home Kitchen.

I do not cook mussels or tahong all the time. But when I get to the grocery early, and I see some nice looking ones, I grab the chance and buy some so we could eat easy baked tahong (mussels).
Baked mussels is one of the easiest dishes to make, except of course for the cleaning and de-bearding part. I think every nanay has her own way of preparing tahong and mine I think is somehow simple, and has passed the test – no sick tummies after the meal.

So what I do is i wash the mussels thoroughly in water and rock salt. Let it stand a bit and then after a while start the de-bearding process.

I use either a knife or kitchen shears to get the beard out fully. For those who arent familiar with this, try looking for some strands of hair around the shell’s opening and pull it out with your hand, or knife or shears. Whatever works for you. They say that eating mussels without removing the *beard* can cause indigestion. Besides, it looks yucky.

Anyway, after that, i brush the dirty looking shells and then give it another wash. I then boil it until all the shells are opened. Discard those that did not open up as these are not fresh.
Once cooked, you can then remove the empty half of the shell so as to prepare it for the toppings of your baked tahong.

Ingredients for the baked tahong recipe:

  • Pre-cooked Mussels or tahong (1kg)
  • Butter (1/2 cup or one stick)
  • Minced Garlic (6 medium sized cloves)
  • Quick melt cheese (or any cheese that you prefer), grated (1 cup or more)
  • Chopped Parsley or parsley flakes
  • Chopped spring onions

Cooking Procedure:

1. Preheat oven to 350 F

2. Soften butter and mix minced garlic thoroughly.

3. Spoon a bit of the mixture into each tahong.

4. Top generously with cheese
5. Sprinkle some parsley flakes and spring onions on top.
6. Bake for about 10 minutes.
7. Serve with hot sauce on the side.
Super easy to make, and compared to ordering it in restaurants you would get to save more when you make this dish at home

So there you have it, i hope you’d give this dish a try. You will not spend more than P230.00 to make this dish and it is a great appetizer!

Filipino Weekly Meal Plan for December 4 to 11, 2017

Been a long time since my last weekly meal plan post, and I am really sorry. Life and motherhood happens and so I can hardly type in front of my computer when my two nurslings are up and about, and when the eldest has exams and assignments to finish.

Anyway, I would like to share with you the Filipino meal plan that I have drafted for the week. I strive harder this time to include fish dishes as they are easier to cook, and are healthier compared to fried meals and red meats.

Here’s our weekly Filipino meal plan for the first week of December 2017:

As always, I have taken into consideration left overs, as well as days where meals will be mostly using up left overs in the refrigerator. Food should be consumed within two to three days to avoid spoilage and food poisoning, thus if you are cooking in big batches, the food has to be frozen after it has cooled to room temperature.

Overnight oats are also amazing, because all you have to do is to make sure that you have oatmeal and some dried fruits like raisins and dried mangoes in your refrigerator, and this should be a go-to-quick and healthy breakfast for everyone. It is such an easy breakfast to prepare because as the name suggests, you have to make it the night before! Caution though on the use of honey for babies, so skip that drizzle if you would be giving them some of this quick brekky.

Chicken Lomi meantime is new to me. This will be an experiment on my part as it will be the first time I will be using fresh noodles sold in grocery stores. Hi Everyone, sharing with you our new, more comprehensive (and revitalized —hahaha) Filipino Weekly Meal Plan Recipes 2017 June 05 to June 11. Hopefully this could help those of you who may not have mapped out their Filipino Weekly Menu as of yet.

Starting this week I will be cascading a more comprehensive meal plan as I will be sharing with you as well, the meals I will be making for our baby, toddler, pre-schooler, as well as our grade-schooler.

Sharing Our new and improved (hahahaha) Filipino Weekly Meal Plan Recipes 2017 June.

If you may notice, most of the packed lunch meal for grade schooler is the same thing that the family will be having for lunch. This is of course to save on prep time, as well as the electricity used for cooking the meals. This will also minimize left-overs and save on our food budget. Check out out baon recipe suggestions in this post.

The meal suggestions for the baby/toddler is meant for BLW babies hence most of the suggested meal items are just unseasoned versions of what the whole family is having. Of course just mind the portion slices depending on the age of your baby, and the weaning method of your baby. Make your own adjustments as well if you follow Tamang Kain principles – although most of the food in the weekly pinoy meal plan above adhere to that.

I have also taken into consideration the suggested school baon recipes that I have included in our back-to-school bundle of blogposts which you may find here.

Some of the recipes, as always, are part of our under P100.00 ulam recipes, in our yearly series.

If you are overwhelmed with the meal plan and would think that it would just leave you slaving in your kitchen the whole day, then you may want to batch cook what you can and just freeze what can be frozen. Here is previous blog post on freezer meals and weekly meal preparation. For instance, pancakes can be frozen in zip lock bags for reheating when needed. This will be very helpful during hurried crazy mornings, or as baon for your little school kids.

Some lunch baons for your gradeschoolers may also need preparation the night befor (like the thawing and breading of porkchop and the tortang talong), but that advanced preparations will leave you worriless the next day because you will just have to fry the above-mentioned pinoy ulam.

I also tend to cook pinoy food that is good for 2-3 meals so that I could save and freeze some for later use, or eat the same ulam at night when everything is going crazy in the household.

If you have noticed there’s not much meat recipes this week, because we are consciously trying to lower our meat consumption. We believe this is good for both our health and our budget.

Also, we are bringing in more shrimps in our diet because we have summed up the courage to let achiebells taste it and she did not get any itch, allergy whatsoever. Plus found a supplier from Gensan that sells fresh frozen ones at costs much lower than that those that are sold in groceries! So maybe, her allergies are clearing up. Nuts seems to make her itchy still though.
