How to cook easy Ginataang Manok

I have always thought that gata dishes are way too complicated and that i can never be good at cooking it. So at the start of the year, i included in my 2018 cooking goals gata recipes that i have always enjoyed eating. This easy ginataang manok recipe I am sharing with you is an easy to cook and nutritious dish you can serve to your family.
In this Filipino ginataan manok recipe, I included malunggay, carrots and potatoes because those were the only veggies left in the refrigerator, but you can use green papaya, sayote or even sitaw or squash for this dish.

  • 2 tbsps sliced Ginger
  • 1 medium sized onion, chopped
  • 2 cloves of garlic, chopped
  • 500-750 grams of chicken
  • 1 to 1 and 1/2 cups of coconut milk
  • 1/2 cup Malunggay leaves (fresh or dried is fine – but I used dried to preserve the bi-weekly supply of fresh leaves I get from a relative)
  • 1-2 pcs carrots
  • 2-3 medium sized Potatoes chopped (i used marbled potatoes though because that is what we have when i cooked this recipe)
  • Salt or Patis adjusted to your taste
  • A pinch of brown sugar

Cooking Procedure for easy ginataang manok.

1. To cook easy ginataang manok, saute ginger, onions and garlic. Add chicken pieces — i usually preboil my chicken but if you want to use raw, then just wait till it browns.

2. Once the chicken has browned, add in the coconut milk (i just used one cup of coconut milk from one fresh matured coconut) for 500 grams of chicken.

3. Once it has boiled add in the marble potatoes (we quarter-sliced ours since I have a toddler and a baby who may get choked with marble potatoes), and then the carrot slices (I sliced mine into stick form for BLW purposes).
4. Bring to a boil and simmer for at least 15 to 20 minutes until the coconut milk has been reduced, thickened and has somewhat rendered oi
5. Add in the malunggay on the 15 minute mark. Cook for about three more minutes.
6. AT THIS POINT YOU MAY SEPARATE A PORTION FOR YOUR TODDLER AND BABY SO THAT THEIRS WILL GO UNSALTED/UNSEASONED.
7. After getting a serving for the kids, you may now season your ginataan with salt or patis — just adjust the seasoning level to your taste/preference. Add as well the pinch of brown sugar. Stir and cook for another two minutes prior to serving.
