Newbie cooking mama alert: Here’s a super easy chicken curry recipe

I have always loved chicken curry as ulam that I really look forward having it when I was younger. When I had my own family, I discovered though that cooking this dish is not as easy as I thought because of the ingredients and the procedure and all the prep it requires especially if you will use fresh coconut milk. Fast forward to today, I came across a super easy chicken curry recipe which I will be sharing with you, newbie cooking mamas.
No fuss at all, and because I usually pre boil our chicken portions for food safety reasons, the cooking time came down to less than 30 minutes! Yes you read that right — chicken curry in less than 30 minutes!
The secret ingredient or literally the “secret sauce” I used for the recipe to make it yummier and easier to cook is Housefoods’ Vermont Curry. This product cuts down the prep time but does not scrimp on the flavor. They come in different variants but I chose the mild version with a hint of apple and honey. You may not have used coconut milk but in the end, you will still get that thick and flavorful curry sauce that is characteristic of the chicken curry everyone loves!
So without further ado here’s our version of —

Ingredients:

500 grams or about four to five pieces of chicken thighs or breast or whatever favorite portion of yours. You can preboil this if you wish, if you have no time you can cook it right after thawing
1 Cup of carrot chunks
1 Cup of potato chunks
1 onion, chopped
3 cloves of garlic, minced
3 cups of water
Housefoods Vermont Curry in mild (1 whole package)

How to cook easy chicken curry:

1. Saute the onion and garlic until fragrant.

2. Add in the chicken pieces and wait until it has turned opaque on all sides if you did not preboil it. If it was preboiled, just make sure that the chicken has been seared and has absorbed the oil in the pan.

3. Add in the chopped vegetables.
4. Add in the water and bring to a boil. Simmer for about 10-12 minutes.
5. Remove the pot from the heat source, and add in the curry bar. Make sure to break down the pieces prior to adding it on to the pot. Stir until the bar has been melted.
6. Bring back the pot into the stove and let the mixture boil. Simmer again for 10 minutes on low fire stirring every now and then.
7. Taste the dish and if the seasoning level is fine with you you may already serve it, if not you may season according to taste using salt or patis. I no longer seasoned it though because the mixture is tasty and flavorful already.

8. Serve this easy chicken curry recipe dish over rice.
