I cook menudillo pork giniling from time to time especially when the craving for real menudo hits yet I do not have all the ingredients it requires.
I usually prepare a masabaw na menudillo with egg version. I purposely cook it with a lot of sauce because the kids love it with rice. And as usual, they love any ulam with boiled egg! (Read our past post on other quick cooking recipes)
This one is easy to prep, and is not so costly. It is just your usual menudillo:
Easy Menudillo Pork Giniling Recipe
Here are the ingredients:
- 2 cloves of Garlic, chopped
- Medium-sized onion, chopped
- Medium-sized tomato, chopped
- 250 grams of lean ground pork (i usually preboil it)
- 4 pcs boiled eggs – quail eggs are better but we dont have it so I just used regular chicken eggs
- 1 cup Fresh tomato puree/tomato sauce or tomato paste whatever you prefer (i just used usual tomato paste here because I ran out of tomatoes)
- Two medium-sized potatoes, cubed
- A medium-sized carrot, cubed
- Salt and pepper to taste
- 1/2 Cup of water (or more depending on your preference)
- Liver spread and raisins are both optional
Cooking Procedure for Menudillo Filipino Recipe:
1.Just saute onion, garlic and tomatoes.
2. Brown the meat.
3. Add the potatoes and carrots.
4. Add half a cup of water and simmer the potatoes are tender.
5. Add in the tomato sauce, bring to a boil then simmer a bit.
6. Add in the boiled eggs and simmer for another two minutes.
7. TAKE OUT A PORTION FOR THE BABY AND THE TODDLER PRIOR TO SEASONING THE MENUDILLO.
8. For adults, you may season with either salt or patis. Add a dash of dark soy for color, and a bit of pepper.
You will not spend more than P150.00 for this menudillo pork giniling ulam that is good for four adults.
