How to Make Air Fried Pork Floss Buns

Back when it was first introduced in the country through a Singaporean Bakery Franchise, almost everyone who tasted floss buns raved about how delicious this pastry is. Like those who lined up for it, I too have loved snacking on the delicious buns topped with my favorite childhood snack ma-hu.

Let’s Make Air Fried Floss Buns

I do not know if it was just the thought of having mahu on bread that made me love the buns, but you know I think it was more than that. The bread was so soft, the dressing that made the mahu cling unto the top of the bun was divine (not too sweet yet not too salty), and of course the mahu toppings was generous! I could not resist eating the snack that my dad gives me as pasalubong whenever he had lunch over at Unimart, or whenever we passed by that Chinese deli stall there in Greenhills

Fast forward to mommy mode, my little tots discovered the yumminess of the floss buns. But since my brood is a bit big, and they could not be satisfied with just one per person, I decided I should try to make some at home.

So, when I researched recipes about it I figured, hey, it is way too complicated. So again, I went back to buying those buns. Until the lockdown happened, and the mom baker in me leveled up another notch higher, and then simultaneously air fryers became the craze. Long and short of it is, while trying to make air fried donuts, I discovered making air fried floss buns. (Check out my other super easy baking recipes here at happypinaymommy baking).

Weird? Not at all. Even chocolate chip cookies are just discovered by accident right?

Air Fried Floss Buns Recipe

So, without further ado here is the recipe for air fried pork floss buns. I suggest that you get all the ingredients prepared before you try to start making the buns so that It will be easier for you to prepare the recipe.

Ingredients:

Buns:

·       ½ Cup Warm Water

·       ¼ Cup warm milk plus 1 tbsp milk

·       2 ¼ tsp yeast

·       1/3 cup plus 2 tbsps granulated sugar

·       ¼ cup salted butter melted

·       1 medium egg

·       1 tsp vanilla

·       2 ½ cups all-purpose flour

·       cooking spray (olive or canola are fine)

Toppings:

·       Japanese Mayonnaise

·       Pork or Chicken Floss

Procedure in making air fried floss buns

Mix the water, milk, sugar, and yeast and wait for it to bloom for the next 3 to 5 minutes. If the yeast does not bloom, discard it and open a fresh pack. Upon blooming add in the melted butter, egg and vanilla.

If using a stand mixer, just combine all the wet and dry ingredients and mix for about 4 minutes or until dough is smooth and elastic. If kneading by hand, you may need to knead for about 10 to 15 minutes until the dough is soft and elastic. Just do not use too much extra flour so that the bun will not be too tough or dry.

Once the dough is smooth and elastic, put it in an oiled bowl and cover it, and put it in a warm place for about an hour or until doubled in size. Once risen, punch out the gas, and put it in a floured surface unti; you could roll it.

Roll the dough into half an inch thickness and cut round circles of about 4 inches in diameter much like a donut that will be filled with jam. as for the scraps, form them into a ball, and then flatten and cut in the same size until you have used up the rest of the dough.

Now, let the cut-out dough rest in a parchment lined tray for about 30 to 35 minutes. Make sure that it is lightly covered.

After the second rise, you can now prepare for frying. Prepare the air fryer by preheating it to 350F or 180C for about five minutes. Spray the cooking basket and put enough dough inside but make sure that it will not get crowded and that they are not touching each other. Spray the top of the dough buns with cooking spray. Air fry for four minutes and then let them cool in a baking rack. repeat the process until all of the dough has been air fried.    

After resting the bun for five minutes, you can then spread mayo on top, and then some pork floss buns. It is now ready to serve! Enjoy! Thanks for dropping by and till next post!

No-grill, no-sweat Tortang Talong recipe

Sharing with you the easiest way to cook Tortang Talong

I have passed my love for Tortang Talong (eggplant omelette) to my children. And why not? It is a sweet yet savory ulam that we Filipinos enjoy.

Before, I used to think that I could not cook it in our house since we do not have an outdoor griller, and we use induction cooking. Little did I know there is a painless way to prepare this dish, without getting your clothes smelling like you’ve just had Mang Larry’s isaw (hahahaha!)

And while the smoky flavor of the char-grilled talong still oozes in flavor, this no-grill tortang talong recipe I am sharing with you, is for sure the next-best thing. It even gets way easier because I cook it with our rice. Moreover, this recipe does not require a lot of ingredients, and is easy on the budget. Easiest version of Tortang Talong

So what I do is I steam the talong on top of the rice I am cooking, if I know that I will need to cook the torta within the next three days. Yes, it can keep for three days in the ref! This is the same process that I do for when I will be making some eggplant salad. This way, when I need to cook the eggplant, I only would just have to get the skin off of it, make the egg batter and cook it.

I find the process of doing everything all in the same day way too tedious. Besides, I do not enjoy peeling the skin off hot eggplants. Who enjoys that anyway right?

Benefits of eating eggplant  

Before I proceed with sharing my go-to tortang talong recipe, let us refresh our memories about the health benefits of having eggplant in our diet. For one, eggplant is rich in anti-oxidants. This means that it can help protect the body from certain types of cancers and other degenerative diseases. It also helps reduce cholesterol levels, helping reduce the chances of contracting cardiovascular diseases.

Moreover, it helps curb blood sugar spikes, and promotes weight loss. Why? It is high in fiber, and makes a person feel fuller much longer.

Let’s cook no-grill Tortang Talong

So, without further ado, let us now proceed with the recipe. Here are the ingredients:

·       4 Eggplants

·       6 eggs

·       4 tsps cornstarch

·       Salt and Pepper to taste

·       Cooking Oil

Procedure in cooking no-grill Tortang Talong:

1.       Steam the eggplant for at least 20 minutes. I usually use the steamer attachment in my rice cooker so that I get to maximize on the energy used to cook our steamed rice. You can chill the eggplant for up to three days if you are not using it right away.

2.       On the day that you will be cooking the torta, peel the skins off and just retain the stem. set aside.

3.       Beat the eggs, add in the cornstarch, and add some salt and pepper. The cornstarch helps in making the batter crispier, and more enjoyable for the children to eat.

4.       Heat oil in a non-stick pan in medium heat.

5.       Flatten the eggplant in the egg mixture until fully soaked, doing it one at a time. Fry the eggplant and pour in a bit of egg mixture on top of it. Wait for the underside to get cooked, and then flip it using a turner or a spatula.  

6.       Drain excess oil, and serve with ketchup!

Baking chocolate crinkles is double the fun with little hands

Hello ladies!

Hope you are all having a great day so far. Today, I will share with you a recipe for a yummy dessert, which could also be a snack alongside a glass of ice cold milk! This post, will feature one of my childhood favorite pastries, Chocolate Crinkles.

Chocolate Crinkles is one of the first pastries I learned to bake as an older kid. And why not? It is so easy to make. It is so forgiving actually. Besides, the ingredients are pantry staples!  The only downside in this recipe is the wait time before we can form those yummy-yummy balls.

Baking Chocolate Crinkles as a fun activity

Fast forward to when I became a mom, Chocolate Crinkles are just so fun to make with the kids. Kids love messy hands and clay consistency and so making these yummy discs of chocolatey goodness is a walk in the park, and super enjoyable. HOWEVER, like me, they too get impatient about the wait time for chilling or refrigeration.

But after two hours of chilling, the littles get so excited rolling those dough balls, and rolling them once again in powdered sugar. Can I blame them? No, no, no. I was once a kid, so why not share the joy right? More importantly, their crinkle making time is also a time for rest for me. I let them enjoy themselves for a good 20 to 30 minutes, and just re-chill the dough balls so that it will not spread out too thinly while baking.

Let’s bake chocolate crinkles!

So, without further ado, I am now sharing with you, my little familia’s tried and tested go-to recipe for chocolate crinkles. If you decide to double this recipe, just store the left-over crinkles (if any, hahaha – that is how delicious it is!) in a vacuum sealed container. Ingredients:

·       ½ cup cocoa powder

·       ¾ cup white sugar

·       ¼ cup melted butter, cooled

·       2 eggs, beaten

·       1 cup All Purpose Flour

·       1 tsp Baking Powder

·       ¼ tsp Salt

·       1 tsp vanilla extract

·       Powdered sugar for dusting

Procedure:

Sift the cocoa, flour, and baking powder. Set aside. In a bowl, mix the melted butter and the white sugar until fully combined. Add in the eggs and the vanilla extract. Add the sale into the dry ingredients, and combine it with the wet mixture in two increments.

Cover the bowl with a plastic wrap and refrigerate for at least two hours. After two hours, you can now preheat the oven at 350F or 180c. Scoop and form the chilled dough balls according to preferred size. Arrange them in a cookie sheet or baking tray lined with parchment paper. Bake for 10-12 minutes, and let it set in the pan for another 20 minutes.

How to make easy walnut brownies

Level-up your brownie recipe with this delicious and easy to make Walnut Brownies!

Hi ladies! Hope you are having a great week so far.  Today, I will share with you my recipe for walnut brownies. I promise this is easy and almost effortless to make, and it levels up your usual and ordinary chocolatey brownie treat to a happier, nuttier level.

Like any of my recipes  in this blog, this is kid-friendly unless of course if your children are allergic to nuts. This can be a family bonding experience for everyone too. Though older kids could manage to do this recipe with minimal help from adults, toddlers with surely enjoy the mess that comes with mixing the batter 😊

Ingredients for walnut brownies

This recipe needs minimal tools and minimal preparation. No machine required, meaning you can mix it by hand! No special tools or pan, any 8 x 8 pan will do, or actually, any oven proof pan you have at home.

Here are the ingredients you need to prepare:

1/4 cup melted butter

1/8 teaspoon salt

1/2 cup sugar

1/4 teaspoon baking powder

3 tablespoons cocoa power

1/2 teaspoon coffee powder (both caffeinated and decaffeinated will work fine)

1/2 cup all-purpose flour

1/4 vanilla extract

1 large egg

1/4 cup chopped walnuts

Steps in baking walnut brownies

If you are doing this brownie without distractions, then you can go ahead with pre heating your oven to 350F or 180C before you start making these brownies. But if there are little hands that will help (and make the process longer hahaha) just preheat the oven when you are done mixing the batter.

Here are the steps in making your walnut brownies:

First you have to sift your flour, cocoa powder, salt, coffee powder and baking powder, then set aside. In a separate bowl, combine your butter and sugar, then add in your beaten egg and vanilla extract. mix thoroughly.

You may then add your sifted dry ingredients to you wet ingredient mixture. Combine it well but do not overmix your brownies. Then, add your walnuts  to the batter leaving a bit for decorating the brownies later. You can add in some chocolate chips too if you wish.

After combining the ingredients, pour the batter into a greased 8 x 4-inch pan. You can also use a parchment paper to make slicing and clean up easier.

Baking the walnut brownies

Preheat your oven to 350F or (180C). Bake the walnut brownies for 15-20 minutes. To check for doneness insert a toothpick in the middle of your pan, and if it comes out clean it’s ready. Once it comes out of the oven, cool your brownies in a cooling rack for 10-15 minutes. Serve and enjoy!

To store, place in an airtight container make sure that your brownies are put away in a place with no direct sunlight at room temperature. Your brownies can last up to one week. But, I assure you it could be gone in just 2-3 days! Walnut brownies are excellent, and go well with vanilla ice cream to cool down on the hot summer days, just make sure to heat up your brownies in an oven toaster before putting that velvety scoop of vanilla ice cream!

Kid-approved oatmeal raisin cookie recipe

Here is a kid approved oatmeal raisin cookie that will surely make your home smell like Christmas!

Making oatmeal raisin cookies is one way to help increase your children’s fiber intake. This recipe I will be sharing with you today, is super no-fuss, and it can even buy you time (click here for more kids activities) to do other chores, or have a half an hour to yourself to catch up on your reading and enjoy your homemade iced americano!

How so? Just prepare the batter, and get the little kids “help out” by forming the cookies with their cute little hands! Yes there may be an added mess that you must clean up, but hey the 30 minutes these squiggly bodies would be more than enough to compensate for that. Plus of course, the cookies that you and the tots will surely enjoy!

Oatmeal Raisin Cookie Recipe

The first thing to do it so assemble the ingredients. Make sure to melt the butter first. Salted is best, but if you do not have salted butter then just add a pinch of salt to the recipe. Here goes!

Ingredients:

1/2 cup butter

3/4 cup muscovado or dark brown sugar

1 cup flour

1/2 teaspoon baking soda

1/2 tsp cinnamon

1 egg

1 1/2 cup rolled oats

1/2 to 1 cup raisins

You can add nuts too!

Make cookie baking fun

You can then make the dough balls using an ice cream scooper, or get the little tots making the dough balls for you. Yes it would not be perfect, but it is an excellent activity for them. You can help them out or leave them be! whatever the case, this recipe is so forgiving it can withstand all those tiny hands and it would not melt or become too gooey in the end. Place the cookies in a cookie sheet lines with a silicone mat or a parchment paper for easy clean up.

Ready to bake the cookies

When you are ready to bake the cookies, you can preheat your oven to 350F (or 180c), and bake the cookies for 12 to 15 minutes! Your house will surely smell like Christmas even if it is Summer!
