Tokwa’t baboy is not as complicated as it seems. Here is a super easy recipe.

Suddenly craved for tokwa’t baboy while I was tenderizing and precooking the meat deliveries. It turned out so easy to do because I already have fried tokwa in the refrigerator.

But even if you do not have readily fried tokwa or tofu in the refrigerator, this dish will still come easy. All you have to do is wash the tofu or tokwa block. fry it in a bit of oil in a non stick pan on the two wider sides. Once both sides are golden brown, you can now the drain the oil and cut the little tokwa into cubes. set aside.

You can then boil the pork belly. make sure to season the water wqith salt and pepper, and laurel if you like. Some add garlic and onions in the boil, but I do not bother doing that anymore 20 minutes. After that, slice it alongside the other recados like the onion and the siling haba.

The next uncomplicated procedure is making the epic sauce of just vinegar, soy sauce, sugar, and then some more siling labuyo if you prefer it spicy.

For newbie cooking mamas who would like to try this quick and super easy tokwa’t baboy that doesn’t use the traditional pork ears, here’s the full recipe:

Easy Tokwat Baboy Recipe

Ingredients:

4 pcs of tokwa

2 pcs siling haba, sliced diagonally

onion minced

Pork belly slice

vinegar

sugar

soy sauce

pepper

siling labuyo is optional

Cooking procedure for simple Tokwa’t Baboy

1. Boil a strip of liempo with salt and pepper. Once cooked, chop into thin slices and set aside. 
2. Fry tokwa blocks. Slice into small cubes once cooked. Set aside.
3. In a small bowl mix vinegar, toyo, sugar. Taste the sauce mixture and adjust according to your liking.
4. Add in sliced siling haba and finely chopped onions. 5. Add the tokwa and the baboy and toss well. Serve with palabok or any lugaw (congee) recipe. Kain na po tayo 🙂

Eggplant with minced meat recipe

Was looking for a new way to cook eggplant and here’s what I did — eggplant with minced meat. Essentially, it is eggplant topped with saucy ground pork, making it a perfect topping over steamed rice.
Easy to cook, and less than a hundred pesos to make, it is definitely another entry in our annual list of P100 Ulam Ideas for this year. The only downside here is that it is not baby or toddler friendly so I have to prep something else for shobz and the little guy. Not baby-friendly as we will be needing soy sauce and oyster sauce for this recipe.
Anyway, for newbie cooking mamas who may want to try this, here’s a rough guide:

The ingredients are easy to find and the cooking procedure is uncomplicated.

Eggplant with minced meat recipe

Ingredients:
3-4 medium sized eggplants, sliced.
1 medium sized onions, chopped
2 cloves garlic, chopped
1/4 kg ground meat (you can use beef, pork or chicken — i used lean ground pork for this recipe)
1/2 cup water
1 tbsp (or more depending on your taste) light oyster sauce
1 tbsp soy sauce (or more depending on your taste)
1 tbsp Chinese cooking wine
Slurry mix: 1/2 tbsp cornstarch dissolved in 1 tbsp of water
Sesame oil

Cooking procedure: talong with ground pork

1. Fry the sliced eggplants and set aside.
2. Saute chopped onions, garlic and ginger. Add in the ground meat (pork is great but i think beef or chicken will be good for this too). 3. Add in half a cup of water.
4. Add in light oyster sauce, adjusted to taste. Add in a tablespoon of Chinese cooking wine.
5. Cook for 2-3 minutes.
6. Add in half a tablespoon of cornstarch dissolved in one tablespoon of water.
7. Stir and then simmer for two minutes.
8. Add in a dash of sesame oil.
9. Pour over fried eggplants and serve.

How to cook lechon paksiw bisaya style

How to cook lechon paksiw bisaya style

Lechon Paksiw Bisaya Style was what I cooked for lunch early today. My aunt gave us their lechon left overs because according to her, I am the only one who is matiyaga enough to recook lechon. So who am I to say no to a yummy blessing?

Recipe for Lechon Paksiw Bisaya Style

I grew up eating the lechon paksiw with liver sauce. Apparently, it is lutong Tagalog pala because when I asked my aunt about the liver sauce for the lechon left over she said there’s none because it is lechon cebu and it does not need that. And since I ran out of Mang Tomas, I just followed her rough instruction of how to cook Bisayang Lechon Paksiw which does not make use of liver sauce.

So for newbie cooking mamas who may want to try this lechon paksiw version, here’s a rough guide:

INGREDIENTS FOR LECHON PAKSIW BISAYA

  • 500 – 700g left over lechon
  • 1/2 Cup Vinegar
  • 1/4 Cup Soy Sauce
  • 1-2 Tbsp Brown Sugar
  • 3-4 pcs Bay leaves
  • Whole pepper

Cooking Procedure for easy lechon paksiw bisaya:

1. Chop the Lechon Paksiw into serving pieces except for the leg part.

2. In a mixing bowl, mix 1/2 cup of white vinegar, 1/4 cup of soy sauce, and 1-2 Tablespoons of brown sugar.

3. Put the lechon in a pot, and pour in the vinegar-soy-sugar mixture.

4. Add in bay leaves, and whole pepper.

5. Bring to a boil, then simmer for about 20-25 minutes until the sauce has been fully absorbed by the meat and the sauce has somehow reduced.

6. In another pot, drizzle some oil and transfer the lechon pieces — leaving out the sauce. Wait until the lechon pieces have rendered some fat.

7. Meanwhile, adjust the sauce taste level to your preference, before pouring it back to the lechon pieces.

8. Cook for about 3 minutes, and then it will be ready to serve.Enjoy!

If you have noticed there’s not much meat recipes this week, because we are consciously trying to lower our meat consumption. We believe this is good for both our health and our budget.

Also, we are bringing in more shrimps in our diet because we have summed up the courage to let achiebells taste it and she did not get any itch, allergy whatsoever. Plus found a supplier from Gensan that sells fresh frozen ones at costs much lower than that those that are sold in groceries! So maybe, her allergies are clearing up. Nuts seems to make her itchy still though.

Hi there ladies! Pardon my two month hiatus in posting meal plans. Will try my very best to regularly update our Filipino Menu Plan every end of the week to help you out as well in your grocery shopping.

So before I explain some of the choices I made for our weekly ulam recipes, here is our meal plan for the week —

For this week, I started labeling lunches also as grade-schooler’s baon. Some of us may already have a gradeschooler, and honestly, thinking of what to pack for lunch can be time-consuming so it better be planned as well ( i by the way have school lunch baon recipe ideas here). To hit two birds with one stone, whatever is for breakfast or lunch that day, shall also be the gradeschooler’s lunch. I am most likely to lean on the lunch menu being similar with that of the gradeschooler’s baon since either the gradeschooler already ate the same breakfast OR we have been constrained to pack it for them so they could eat it while on the way to school. Given the very lousy traffic situation in the morning, children may no longer have time to sit down and finish their breakfasts as they would rather sleep some more, and at the same time be in school on time. Some moms, they pack the breakfast so that the kids can eat it on the way to school, or upon arrival.

As you can see, some ulams indicated are left-overs to ensure that no food and money will be wasted. It is disheartening to see food going to waste just because family members forgot about it in the ref, or they simply have not been trained to eat left overs.

The Tuna nuggets recipe, I learned from some of my social media friends – it is cheap and easy, just cans of shredded tuna, some crumbed crackers, egg and then cooking oil for frying. Easy and a hit with the children! Mind you it can be a baon or a meryenda or a lunch!

So there you have it. Hope ill be able to help you plan out your ulam meals for the coming week.
